Fino de Aroma Cacao Beans
The "Fino de Aroma" denomination is an International Cocoa Organization (ICCO) classification which describes an exquisite aroma and flavour. It accounts for about 8% of the cocoa produced in the world - 70% of which is grown in Colombia, Ecuador, Venezuela, and Peru. The majority of cocoa in the general market is grown in Africa - from the Forastero variety or hybrids that have been developed to improve yield. This results in ‘dumbed down’ cocoa which lacks the rich flavour variations seen from the original cocoa strains. "Cacao Fino de Aroma", however, comes from the Criollo and Trinitario varieties - the Trinitario being the result of the centuries old cross fertilisation between the Criollo and Forastero strains and is produced mainly in Colombia, Ecuador, Venezuela, and Peru, but also in the Caribbean and Madagascar. It is highly sought after for the subtle nuances in flavour that only fine flavour beans can provide. Like wine, the region where the cacao is produced determines its flavour profile therefore the fertile fields and moderate climate give "Cacao Fino de Aroma" an aromatic, rich, sweet taste with fruity, flowery, and nutty coffee notes, a characteristic flavour that distinguishes it from the other cocoas in the world.
